A reinvigoration of an iconic St Kilda venue which has previously been a bank, pub, nightclub and a Thai restaurant. These are just some of the past lives the iconic Saint building has lived since it opened in 1915. The overall vision for the renovation circulates around the exploration of performative dining experiences immersed in a collection of considered social environments. The emphasis on the highly material elements celebrating the existing building's character and the relationship between the raw and the refined create an enveloping sensory experience.

The focal point is Saint Dining, a restaurant located on the ground floor. It's dark and moody, filled with leather sofas and touches of marble and bronze. The kitchen is designed around a Josper grill, which kisses almost everything on the menu.
